Seafood in Bohuslan — Oysters, Lobster & More

10 March 20266 min read

Bohuslan isn't just dramatic cliffs and stunning nature — it's also Sweden's undisputed seafood capital. The cold, clean waters along the west coast create perfect conditions for world-class oysters, langoustines, lobster and crab. Here's our local guide to the best shellfish, where to find them and how to enjoy them in the cabin.

Why is Bohuslan's seafood so special?

It's all about the water. The Gullmar Fjord outside Lysekil is Sweden's only true threshold fjord, a unique ecosystem where cold, nutrient-rich deep water creates ideal conditions for shellfish. Combine that with the clean, salty waters and strong currents of the Bohuslan coast, and you get seafood with an intense, pure flavour that's hard to find anywhere else.

The local community has lived off the sea for generations. Fishing here isn't just an industry, it's a way of life and a tradition that shapes the entire coast.

Oysters — self-picking and safaris

Bohuslan is Sweden's oyster centre, and the wild oysters along the coast are among the best in Europe. The season runs from October to April (the old rule: months with an R in the name), but November to February is the absolute peak.

Pick your own

Did you know you can pick wild oysters yourself in parts of Bohuslan? In many places this is allowed for personal use, but in others you need the landowner's permission and local restrictions may apply. The oysters grow on rocks and stones in shallow bays. Bring sturdy shoes, an oyster knife and something to carry them in.

Our tip: Check with the county administrative board about current restrictions before heading out. Some areas may be closed during parts of the year.

Oyster safaris in Grebbestad

For a more organised experience, Grebbestad — about 45 minutes from our cabins — is the epicentre of oyster safaris. Guided tours take you to the best picking spots where you learn to shuck oysters properly and enjoy them on the rocks with lemon juice and a glass of chablis.

Langoustines — Bohuslan's everyday luxury

If there's one shellfish that truly symbolises Bohuslan, it's the langoustine (Nephrops norvegicus). These beautiful, orange-pink shellfish are caught in the Gullmar Fjord and along the entire coast. The flavour is sweet, delicate and completely unlike the frozen imported variety.

Where to buy fresh langoustines

Lysekil's fish harbour is your best friend. In the morning when the boats come in, you can buy langoustines directly from the fishermen — it doesn't get fresher than that. Fiskekrogen in Lysekil also sells the fresh catch.

How to cook them: Bring well-salted water to a rolling boil (about 3 tablespoons salt per litre) with some dill crowns. Add the langoustines and boil for 3-4 minutes. Let them cool in the broth. Serve with aioli, bread and a squeeze of lemon.

Lobster — the king of shellfish

The lobster premiere in late September is one of Bohuslan's biggest events. Fishermen who have been guarding their pots for months finally get to haul in the year's first catch. The season runs from September to November, and a fresh Bohuslan lobster is something truly special.

Local boats and roadside stalls

During summer and early autumn, you'll find fishermen selling their catch at the roadside or from their boats in small harbours. Keep your eyes open — this is often the freshest fish you'll find.

Cook seafood in the cabin

Both our cabins have fully equipped kitchens with everything you need to prepare a proper seafood feast. Large pots, shellfish tools and plenty of serving space for laying out an authentic Bohuslan seafood spread.

Roda huset also has an outdoor barbecue area. Imagine grilling langoustines and crab on a warm summer evening, with distant views from the observation tower as a bonus. That's the kind of evening that defines a Bohuslan holiday.

Vita Torpet is perfect for an intimate seafood dinner for two. Prepare the oysters and langoustines, set the table and enjoy the silence.
